Recipe Tips & Tricks

Use soft sugar cookies. The really soft, thick cookies give you the nicest layers after chilling. Thin, crunchy cookies can turn a little too mushy instead of cake-like.

Make sure the pudding thickens first. Give it a full couple minutes of whisking so it’s clearly thick before you fold it in. If it’s still loose, the filling won’t set up as nicely.
