Strawberry Cream Semifreddo

Strawberry Cream Semifreddo is one of my favorite frozen desserts when I want something that’s creamy and a little more special than basic ice cream. It slices like a soft ice cream cake, and that strawberry swirl running through it makes each piece look (and taste) finished.

The flavor is all about fresh strawberries, a little lemon, and a rich dairy base that reminds me of a light mascarpone gelato. I really like the texture here—airy but rich—and it stays scoopable after a short rest on the counter.

For me, this is a great make-ahead summer dessert for dinners with friends, holidays, or any time I want a dessert that I can slice and serve fast. I usually keep it simple with sliced berries and a few mint leaves on top.

Recipe Instructions

  1. Blend the strawberries: Blend the strawberries, sugar, lemon juice, and salt until smooth.
  2. Simmer the swirl: Pour the strawberry mixture into a small saucepan and simmer over medium heat until slightly thickened, about 5 to 7 minutes. Stir often so it doesn’t scorch.
  3. Chill the swirl: Cool the strawberry sauce completely, then chill until cold. It needs to be cold before you swirl it into the cream base.
  4. Heat the yolks: Whisk the egg yolks, sugar, and water in a heatproof bowl set over a saucepan of gently simmering water. Cook, whisking constantly, until pale, thick, and warm, reaching 160°F, about 6 to 8 minutes.
  5. Cool the yolk mixture: Remove the bowl from the heat and whisk for 2 to 3 minutes, until slightly cooled and thickened.
  6. Add mascarpone: Whisk in the mascarpone, vanilla, and salt until smooth.
  7. Whip the cream: Whip the cold heavy cream to medium peaks.
  8. Fold the mixtures: Fold the whipped cream into the yolk mixture in two additions, folding gently until no streaks remain.
  9. Line the pan: Line a loaf pan with plastic wrap, leaving some overhang so it’s easy to lift out later.
  10. Layer the semifreddo: Spread one third of the semifreddo mixture into the pan, then dollop and swirl in one third of the cold strawberry swirl.
  11. Repeat the layers: Repeat the layers, ending with the remaining semifreddo and the remaining strawberry swirl on top.
  12. Freeze: Cover and freeze until firm, at least 6 hours or overnight.
  13. Slice and serve: Unmold, slice, and serve after tempering on the counter for 5 to 10 minutes. Top with sliced strawberries and mint if you like.

Recipe Tips & Tricks

Make sure the strawberry swirl is cold. If it’s still warm, it can melt and loosen the semifreddo base while you’re layering. I chill it until it feels properly cold in the center of the bowl.

Keep the simmer gentle for the yolks. You want barely simmering water under the bowl, not a hard boil. Too much heat can scramble the yolks around the edges.

Use medium peaks for the cream. If you go all the way to stiff peaks, the base can turn a little grainy when you fold. Medium peaks fold in cleaner and keep the texture softer.

Soften the mascarpone first. Cold mascarpone can leave tiny lumps that never fully whisk out. If it’s too firm, I let it sit at room temp for 10 to 15 minutes.

Don’t over-swirl. A few big swirls look nicer and you get clear ribbons of strawberry. If you stir too much, the whole thing just turns pink.

Storage and Make Ahead

This semifreddo is meant to be made ahead, since it needs time to freeze until firm. I usually make it the day before I want to serve it so it’s not a last-minute thing.

Keep it tightly wrapped in the freezer. After it’s frozen, press plastic wrap against the surface and wrap the whole pan well so it doesn’t pick up freezer smells.

If you want to portion it, you can freeze individual slices and then move them to a container once they’re solid. Let slices sit out for a few minutes before serving so they’re easy to cut and creamy again.

You can also freeze it for up to 2 weeks. After that it’s still fine, but the texture starts to lose that soft, creamy edge.

This usually happens if the cream wasn’t whipped enough, the swirl was added warm, or the dessert wasn’t wrapped tightly in the freezer. It can also happen if the strawberry sauce is very watery, so simmer it until it thickens slightly before chilling.
