Smores Refrigerator Cake
S’mores Refrigerator Cake is my no-bake version of the campfire classic, made as a sliceable icebox cake with graham cracker layers, a chocolate pudding cream, and a toasted marshmallow topping. It’s cold, creamy, and messy in the best way.
The graham crackers turn soft and cake-like as it chills, and the pudding layer stays rich and chocolatey without feeling heavy. I also really like the marshmallow creme on top because it gives you that sticky s’mores thing without needing to build anything one-by-one.

- Drizzle the chocolate: Melt the chocolate chips with the heavy cream in 20-second bursts, stirring each time, until smooth. Drizzle over the chilled cake.
- Toast the marshmallows: Sprinkle mini marshmallows on top, then toast with a kitchen torch or a 450°F broiler for 1 to 3 minutes. Watch closely so they don’t burn.
- Finish and slice: Sprinkle with graham cracker crumbs, then slice and serve cold. Wipe the knife between cuts for cleaner squares.

- 2 cups mini marshmallows
