Pistachio Cannoli Babka is a tender, enriched loaf with a pistachio swirl and a sweet ricotta layer that bakes up like something you’d pick up from a good bakery.

I like this one because it’s rich but still light when you slice it, with that nutty pistachio flavor and a little cannoli-style warmth from vanilla and orange zest. The mini chocolate chips are optional, but I think they’re worth it if you want that classic cannoli feel.

This is one of my favorite loaves to make for weekend coffee, brunch spreads, or when I want a dessert that can sit on the counter and be sliced as needed. It’s also a nice change from a frosting-heavy cake.

Dough

Recipe Instructions

  1. Bloom the yeast: Warm the milk to lukewarm, then whisk in the yeast and 1 teaspoon of sugar. Let it sit for about 5 minutes, until foamy.
  2. Mix the dry ingredients: In a large bowl, mix the flour, remaining sugar, and salt.
  3. Form the dough: Add the eggs, vanilla, and the yeast-milk mixture to the bowl. Mix and knead until a shaggy dough forms.
  4. Knead in the butter: Add the softened butter gradually, kneading as you go, then knead 8 to 10 minutes until the dough is smooth, elastic, and slightly tacky.
  5. Let rise: Put the dough in a greased bowl, cover, and let rise until doubled, about 60 to 90 minutes.
  6. Make the pistachio swirl: Stir together the ground pistachios, pistachio paste, sugar, melted butter, cinnamon, and salt until you have a spreadable paste. Set aside.
  7. Mix the ricotta layer: Whisk the drained ricotta, powdered sugar, cornstarch, vanilla, orange zest, and cinnamon until thick. Fold in the mini chocolate chips and chopped pistachios.
  8. Roll the dough: Punch down the dough, then roll it into a 10 x 16-inch rectangle on a lightly floured surface.
  9. Add the fillings: Spread the pistachio mixture over the dough, leaving about a 1-inch border. Dollop the ricotta mixture over the top and gently spread it into an even layer.

Recipe Tips & Tricks

Drain the ricotta. If you want clean slices, don’t skip this. I usually drain it in a fine mesh strainer or cheesecloth for a few hours, and longer is fine too.

Chill the rolled log before cutting. A short chill makes the twist so much easier. The fillings firm up and you get less smearing.

Keep the fillings away from the edges. Leaving a border helps the roll seal. If the ricotta is too close to the edge, it’s more likely to leak and make the twist messy.

Loosen the pistachio swirl if needed. If it feels thick or hard to spread, stir in a tablespoon of milk at a time until it moves like a soft paste.

Use a thermometer if you have one. Babka can brown fast on top but still be underbaked in the center. Around 190°F in the middle is a good target.

Ingredients

Dough

  • 3.5 cups bread flour
  • cup granulated sugar
  • 2.25 tsp active dry yeast
  • 1 tsp fine salt
  • ¾ cup whole milk warmed
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 6 tbsp unsalted butter softened
  • 1 tbsp orange zest optional.

Pistachio swirl

  • 1 cup pistachios finely ground
  • ¼ cup pistachio paste
  • ¼ cup granulated sugar
  • 4 tbsp unsalted butter melted
  • ½ tsp ground cinnamon
  • pinch salt
  • ½ cup mini chocolate chips optional.

Cannoli ricotta layer

  • 1.5 cups whole milk ricotta well drained
  • ½ cup powdered sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tsp orange zest
  • ¼ tsp ground cinnamon
  • cup mini chocolate chips
  • ¼ cup chopped pistachios.

Egg wash and finish

  • 1 large egg
  • 1 tbsp milk

Instructions

Dough and first rise

  • Warm milk to lukewarm then whisk in yeast and 1 tsp sugar and rest 5 minutes until foamy

  • add butter gradually and knead 8 to 10 minutes until smooth elastic and slightly tacky
  • place in a greased bowl cover and rise until doubled 60 to 90 minutes.

Fillings and shaping

  • Mix pistachios pistachio paste sugar melted butter cinnamon and salt into a spreadable paste and set aside
  • whisk ricotta powdered sugar cornstarch vanilla zest and cinnamon until thick then fold in chocolate chips and chopped pistachios
  • punch down dough and roll to a 10 by 16 inch rectangle then spread pistachio mixture leaving a 1 inch border and dollop and gently spread ricotta layer over the top
  • roll tightly from the long side into a log then chill 15 to 20 minutes to firm
  • cut lengthwise to expose layers then twist the two halves together keeping cut sides up and place in a greased 9 by 5 inch loaf pan.

Second rise and baking

  • Cover and proof until puffy 45 to 60 minutes
  • heat oven to 350 F
  • whisk egg and milk and brush over loaf and sprinkle pistachios
  • bake 35 to 45 minutes until deep golden and internal temperature reaches about 190 F then cool in pan 15 minutes and cool completely on a rack before slicing.

Optional syrup and serving

  • Simmer water and sugar 2 minutes then brush over hot loaf for extra shine and moisture
  • dust with powdered sugar before serving if desired.

Notes
