Pistachio Brookies
Pistachio Brookies are my favorite kind of one-pan dessert bar: a fudgy brownie base with a chewy pistachio cookie layer baked right on top.
The chocolate stays deep and rich, and the pistachios add that nutty flavor I actually want in a bar like this. I also like the white chocolate here because it makes the pistachio layer taste a little more like cookie dough.
I make these when I want something that slices cleanly for a cookie tray but still feels like a real treat. They’re especially good with coffee, and I think they’re best after they’ve had time to cool and set.

Cool the melted butter a bit. If the butter is piping hot, it can make the batter harder to whisk smooth. Five minutes on the counter is usually enough.
Stop mixing as soon as the flour disappears. Overmixing makes both layers tougher, and these are better soft and chewy.
Chill the cookie dough if it feels soft. If your kitchen is warm, a quick 10-minute chill makes it easier to drop and press over the brownie layer.
Don’t force full coverage. I aim for “mostly covered,” not perfectly sealed. Little gaps are fine and they bake up nicely.

- 1/2 tsp fine salt
- 3/4 cup shelled pistachios chopped
- 1/2 cup white chocolate chips.
For the Pan

Instructions
Prep
- Heat oven to 350 F
