Lazy Chicken Parmesan Grilled Cheese Recipe

This Lazy Chicken Parmesan Grilled Cheese is basically my shortcut version of a chicken parm sandwich, but in crispy grilled cheese form. It’s cheesy, saucy, and a little salty in the best way.

You get that familiar marinara + mozzarella flavor, plus shredded chicken so it actually feels like dinner. I like the mix of mozzarella and parmesan here because it gives you a good melt and a stronger, more savory finish.

For me, this is a go-to weeknight sandwich when I have rotisserie chicken in the fridge. It’s also great with a simple salad or a bowl of tomato soup if you want something warm and easy alongside.

Why You’ll Love This Recipe

Weeknight Friendly: It uses cooked chicken, jarred marinara, and a quick garlic-butter spread, so it comes together fast.

Real Chicken Parm Flavor: Marinara, mozzarella, and parmesan give it that classic Italian-American taste without having to bread and fry anything.

Extra Cheesy: The cheese goes on both sides of the filling, which helps everything stick together and melt evenly.

Crispy Outside: Buttered Italian bread grills up deep golden and stays sturdy even with the saucy filling.

Easy to Tweak: You can swap in provolone, use different breads, or add basil if you want it a little fresher on top.

Key Ingredients

Sandwiches

  • Italian bread: I like Italian bread because it’s sturdy and doesn’t get floppy once the marinara hits. A thicker slice is easier to flip, too.
  • Cooked shredded chicken: Rotisserie chicken is the quickest option here, but any leftover roasted or poached chicken works. Shred it small so it heats through fast.
  • Marinara sauce: Use your favorite jar or homemade marinara. I like one that’s not too watery, since a thin sauce can make the sandwich slide around.
  • Shredded mozzarella: This is the main melt. Pre-shredded works fine, but freshly shredded melts a little smoother if you have time.
  • Grated parmesan: Parmesan gives it that chicken parm edge and makes the filling taste more “finished.” I also like a little extra for the outside crust sometimes.
  • Italian seasoning: This is an easy way to make the chicken taste like it belongs in a chicken parm situation. If your marinara is already heavily seasoned, you can go lighter.
  • Salt: Go easy at first, especially if your chicken and marinara are already salty. I usually adjust after mixing.
  • Black pepper: Freshly ground is nice here, but anything is fine. It helps cut through the richness of the cheese.
  • Fresh basil: Totally optional, but it’s good if you want something fresh on top. A few torn leaves is enough.

Garlic Butter Spread

  • Unsalted butter: Softened butter spreads easily and gives you that even browning. If you only have salted butter, just hold back on added salt in the filling.
  • Garlic powder: Garlic powder keeps things simple and doesn’t burn as easily as fresh garlic can in a skillet grilled cheese.
  • Dried oregano: This adds a little pizza-shop flavor to the outside of the bread. Dried basil works too if that’s what you have.

Recipe Instructions

  1. Mix the filling: Stir the cooked shredded chicken with marinara and Italian seasoning until everything is coated. Season with salt and black pepper to taste.
  2. Make the spread: Mix the softened butter with garlic powder and dried oregano until smooth and evenly combined.
  3. Butter the bread: Spread a thin layer of the garlic butter on one side of each bread slice. Keep it thin so the bread browns evenly instead of soaking.
  4. Layer the cheese: Place two bread slices butter-side down and add a layer of mozzarella to each one. This helps “glue” the sandwich together.
  5. Add chicken and finish: Spoon the chicken mixture over the mozzarella, then sprinkle parmesan on top and add a little more mozzarella. Close with the remaining bread slices, buttered sides facing out.
  6. Heat the skillet: Warm a skillet over medium to medium-low heat. You want steady heat so the cheese melts before the bread gets too dark.
  7. Grill the sandwiches: Cook until the bread is deep golden and the cheese is melted, about 4 to 5 minutes per side. Press lightly, and lower the heat if the bread is browning too fast.
  8. Rest and serve: Let the sandwiches rest for 1 minute, then slice and garnish with basil if you’re using it.

My Tips!

This is the section that separates “good” from “wow.” If you read only one part of this post, make it this one — it’s where I reveal my recipe trick.

Recipe Tips & Tricks

Keep the heat medium-low if your skillet runs hot. This sandwich is thick, so it needs time for the cheese to melt. If the bread is getting dark too fast, just turn it down and give it another minute or two.

Shred the chicken fairly small. Big chunks make the sandwich harder to slice and harder to keep together. Smaller shreds also warm up faster, which helps a lot.

Don’t overdo the marinara. Too much sauce makes the filling slip and can make the bread steam instead of crisp. I like it saucy, but still scoopable, not soupy.

Try provolone if you want a sharper melt. Swapping part of the mozzarella for provolone is a nice change and still melts really well. I do this when I want it a little more “deli” tasting.

Add parmesan to the outside for extra crunch. A thin layer sprinkled onto the buttered bread (right before it hits the pan) gives you a crispier, more savory crust. Just keep it light so it doesn’t burn.

The air fryer works, too. If you’d rather not stand at the stove, air fry at 370°F for about 6 to 8 minutes, flipping halfway, until the outside is golden and the cheese is melted.

Simple tweaks

Here’s where the fun begins — a few simple tweaks can turn this recipe from casual treats into the star of any party.

Serving Suggestions

  • Salad: A simple chopped romaine salad with cucumber and a quick vinaigrette is nice here. I usually keep it light since the sandwich is pretty rich.
  • Soup: Tomato soup is the obvious match, but even a basic vegetable soup works. Something brothy is good alongside all that cheese.
  • Crunchy side: Kettle chips, roasted potatoes, or even a handful of pickles on the plate makes it feel like a real sandwich shop meal. Pickles are especially good if your marinara is on the sweeter side.
  • Extra dip: Warm a little extra marinara for dipping. It’s messy, but worth it.

Eat it later

This section explains how to store leftovers properly and how far in advance the recipe can be prepared.

Storage and Make Ahead

Store leftovers covered in the fridge for up to 3 days. The bread softens a bit in the fridge, but the flavor is still good.

For reheating, I like a skillet over medium-low heat so the outside crisps back up. A toaster oven works well, too, especially if you don’t want to babysit it.

You can make the chicken mixture ahead and keep it in the fridge, then build the sandwiches when you’re ready. That’s usually the part I’m happiest to have done already.

If you want to freeze them, freeze the fully assembled (but ungrilled) sandwiches wrapped well. Thaw in the fridge overnight, then cook low and slow so the center heats through.

Recipe FAQs

Can I use rotisserie chicken?

Yes, and it’s the fastest way to make this. I usually grab a rotisserie chicken, shred it while it’s still a little warm, and keep it in the fridge for sandwiches like this.

How do I keep the bread from burning before the cheese melts?

Use medium-low heat and give it time. If your bread is browning too quickly, turn the heat down and cover the skillet for a minute to help trap a little heat and melt the cheese.

Can I make this in the air fryer?

You can. Cook at 370°F for about 6 to 8 minutes, flipping halfway, and keep an eye on it near the end since air fryers vary.

What cheese works besides mozzarella?

Provolone is my favorite swap, either all provolone or half and half with mozzarella. Monterey Jack also melts well, but it changes the flavor away from classic chicken parm.

Can I add parmesan on the outside of the bread?

Yes, and it’s a nice extra if you like a crunchier crust. Sprinkle a thin layer onto the buttered side right before it goes into the skillet, and cook a little gentler so it doesn’t scorch.
