Kataifi Pistachio Dessert Lasagna

Kataifi Pistachio Dessert Lasagna is my kind of no-bake dessert when I want something rich, crunchy, and a little different from the usual bars and tiramisu-style trays. It’s layered with toasted shredded phyllo, a pistachio layer that tastes like sweet nutty cream, and a thick mascarpone filling.

What makes this version stand out for me is the contrast: crisp kataifi against the soft whipped cream layer, plus that chocolate topping that sets up like a simple ganache. It’s sweet, yes, but it still feels balanced because the tahini and salt keep it from tasting flat.

I like serving this cold, sliced into neat squares, especially for holiday tables and big family dinners where you want a make-ahead dessert that looks like you really tried. It’s also great when you need something that travels well and doesn’t require last-minute fuss.

Why You’ll Love This Recipe

Make-ahead friendly: This is one of those desserts that actually gets easier after a long chill, and the slices come out cleaner the next day.

Crunchy + creamy: Toasted kataifi gives you that crisp bite, and the mascarpone layer stays thick and fluffy instead of melting into a puddle.

Pistachio-forward: The pistachio layer tastes like the inside of a fancy chocolate, especially if you add a little tahini.

No-bake serving: Once the kataifi is toasted, the rest is just mixing and layering. No worrying about doneness or overbaking.

Looks great sliced: The layers are bold and pretty, and a handful of chopped pistachios on top makes it look finished with almost no effort.

Key Ingredients

Toasted Kataifi Base

  • Kataifi shredded phyllo dough: This is the thin shredded phyllo (sometimes labeled kataifi/kunafa dough). I like the frozen kind from Middle Eastern grocery stores; just thaw it in the fridge so it’s easy to loosen.
  • Unsalted butter: Butter is what makes the kataifi toast up evenly and taste like something you’d get from a pastry shop. Salted butter works too; just go lighter on added salt.
  • Granulated sugar: A little sugar helps the kataifi brown and gives the base a light crisp sweetness.
  • Fine salt: Don’t skip it. It keeps the base from tasting one-note, especially once the creamy layers go on.

Pistachio Layer

  • Pistachio cream or pistachio spread: This is the main flavor, so use one you like. Some brands are sweeter and looser than others, and either can work here.
  • Sweetened condensed milk: This smooths out the pistachio layer and makes it spreadable. If you like things less sweet, you can cut it back a bit.
  • Tahini: Optional, but I like what it does here. It gives a mild toasty depth that keeps the pistachio from tasting candy-sweet.
  • Vanilla extract: Just enough to round everything out and make the pistachio layer taste more “dessert” than “spread.”

Cream Cheese Layer

  • Cream cheese: Use the block-style cream cheese, not the tub. It sets up better and keeps the layer thick.
  • Mascarpone: Mascarpone makes this taste softer and less tangy than an all-cream-cheese layer. Let it fully soften so it doesn’t stay lumpy.
  • Powdered sugar: Powdered sugar dissolves fast and keeps the filling smooth. I start with what the recipe calls for, then adjust only if my pistachio cream is very bitter.
  • Heavy whipping cream: Cold cream whips up faster and holds better. This is what gives you that light, mousse-like lift.
  • Vanilla extract: I use regular vanilla here, but a little vanilla bean paste is nice if you have it.
  • Fine salt: A small amount makes the dairy taste cleaner and keeps the sweetness in check.

Chocolate Topping

  • Semi-sweet chocolate chips: Semi-sweet is my go-to because it doesn’t get cloying with the pistachio layer. Dark chocolate works too if you want it more intense.
  • Heavy cream: This turns the chocolate into a quick ganache that spreads easily and sets up in the fridge.
  • Unsalted butter: Butter adds a little shine and makes the topping slice cleaner.
  • Cocoa powder: Optional, but helpful if you want the topping more chocolatey without adding extra sweetness.

Garnish

  • Chopped pistachios: I like a fairly small chop so it sticks to the topping and doesn’t fall off when you slice.
  • Toasted kataifi: Totally optional, but great if you want more crunch on top right before serving.
  • Flaky salt: Also optional, but a tiny pinch on each piece is really good with the chocolate.

Recipe Instructions

  1. Preheat the oven: Heat the oven to 350°F and line a rimmed baking sheet with parchment paper or foil for easy cleanup.
  2. Prep the kataifi: Loosen the kataifi strands with your fingers and spread them out evenly on the baking sheet so they toast instead of steaming.
  3. Butter and season: Drizzle the melted butter over the kataifi, then sprinkle on the sugar and salt. Toss well so the strands are coated as evenly as you can.
  4. Bake: Bake for about 12 to 15 minutes, stirring once or twice, until the kataifi is deep golden and crisp. Watch the edges near the end so it doesn’t over-brown.
  5. Cool: Let the toasted kataifi cool completely. Once it’s cool, lightly press half of it into a 9×13-inch dish to form the base.
  6. Mix the pistachio layer: Whisk the pistachio cream with the sweetened condensed milk, tahini (if using), and vanilla until smooth and spreadable.
  7. Mix the cream layer: Beat the cream cheese and mascarpone with the powdered sugar, vanilla, and salt until smooth. Stream in the cold heavy cream and whip to medium-stiff peaks so the filling holds its shape.
  8. Spread the pistachio layer: Spread the pistachio mixture evenly over the kataifi base, all the way to the edges.
  9. Spread the cream layer: Spoon the whipped cream cheese mixture over the pistachio layer and spread it into an even layer.
  10. Add more kataifi: Sprinkle the remaining toasted kataifi over the cream layer and gently press it down so it sticks.
  11. Make the chocolate topping: Heat the cream until steaming, then pour it over the chocolate chips with the butter. Let it sit for about 2 minutes, whisk until smooth, and whisk in cocoa powder if you’re using it.
  12. Top and chill: Spread the chocolate over the kataifi layer, then refrigerate for at least 4 hours (overnight is even better). Slice and garnish with chopped pistachios before serving.

My Tips!

This is the section that separates “good” from “wow.” If you read only one part of this post, make it this one — it’s where I reveal my recipe trick.

Recipe Tips & Tricks

Let the kataifi cool all the way. If it’s still warm when you layer, it will soften fast and you lose that crunch. I spread it out a bit so it cools quicker.

Toast it darker than you think. Pale kataifi can taste a little bland once it’s chilled under cream. Deep golden is what you want, as long as it doesn’t taste burnt.

Whip the cream to medium-stiff peaks. Too soft and the filling won’t slice cleanly; too stiff and it can look a little grainy when you spread it. Stop when it holds shape but still looks smooth.

Warm weather needs a little help. If your kitchen runs hot or this is sitting out at a party, stabilizing the whipped cream (instant pudding mix or a little bloomed gelatin) makes the layer hold up better.

Salt matters here. If you reduce the condensed milk for a less sweet version, bump the salt up slightly. It makes the pistachio and chocolate taste sharper.

Simple tweaks

Here’s where the fun begins — a few simple tweaks can turn this recipe from casual treats into the star of any party.

Serving Suggestions

  • Arabic coffee or espresso: A small cup of strong coffee is really good with this. I like it best when the coffee isn’t sweet.
  • Fresh berries: Strawberries or raspberries are nice on the plate, especially if you want something bright next to the chocolate topping.
  • Extra pistachio: Add chopped pistachios right before serving so they stay crisp. A tiny pinch of flaky salt on top is good too.
  • Small slices: This is rich, so I usually cut smaller squares for a dessert table. People can always go back for another piece.

Eat it later

This section explains how to store leftovers properly and how far in advance the recipe can be prepared.

Storage and Make Ahead

Store leftovers covered in the fridge for up to 4 days. This dessert is best served cold, and the layers hold up well once it’s fully chilled.

You can make this recipe ahead the day before you need it. I actually prefer it that way because the slices come out cleaner and the topping is fully set.

If you want to freeze it, freeze individual portions so you can thaw what you need. Thaw in the fridge overnight; the kataifi will soften a bit, but it still tastes great.

Recipe FAQs

Where do I find kataifi (shredded phyllo)?

I usually find it in the freezer section at Middle Eastern or Mediterranean grocery stores, sometimes labeled kataifi or kunafa dough. If you’re shopping at a bigger store, check near frozen phyllo sheets.

Can I use pistachio butter instead of pistachio cream?

Yes. Pistachio butter is usually thicker and less sweet, so you may want to add a little extra powdered sugar to the pistachio layer to get the sweetness where you want it.

Do I have to use tahini?

No, it’s optional. I like it because it adds a slight roasted, sesame taste that works well with pistachio, but the dessert is still great without it.

Why is my cream layer runny?

The most common issue is the heavy cream wasn’t cold, or it wasn’t whipped enough to hold medium-stiff peaks. It can also happen if the cream cheese or mascarpone were too warm and loose before whipping.

How long do I really need to chill it before slicing?

Give it at least 4 hours so the chocolate topping sets and the cream layer firms up. Overnight is even better if you want clean, tidy squares.
