Ingredients

  • 12 oz penne pasta
  • 1 tbsp salt for pasta water.

Chicken

  • 1 lb boneless skinless chicken breast cut into bite size pieces
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp paprika.

Creamy Corn Sauce

  • 2 tbsp unsalted butter
  • 1 small yellow onion diced
  • 3 cloves garlic minced
  • 1.5 cups corn kernels fresh or frozen
  • 1 cup heavy cream
  • ½ cup milk
  • ¾ cup grated parmesan
  • ½ cup reserved pasta water as needed
  • ¼ tsp red pepper flakes optional

  • return chicken to the skillet and add cooked pasta then toss until coated
  • taste and adjust salt pepper and lemon juice

Notes
